I am looking for software that works on Full Tilt. My primary interest is
tracking my opponents' hands and activity. Any recommendations?
BTW, is this software unethical?

Poker Tracker has Full Tilt on it's support list:
http://www.pokertracker.com/ptsupported.html
And no, it's fine. You could do the same thing with a notepad or an
empty database. This just saves you time and gives you a higher level
of accuracy. It's Kosher, as it were.
