It varies.

You can play HORSE in any order. I've played it in a home game high
carded, with the high card picking which game to start with. We played
SEHOR, in effect.

In casinos, or online, it's generally more formal.

When it gets down to seven does it change at every orbit or still stay

He must be referring to STTs, in MTTs it goes by a fixed amount of time, period.

In a HORSE tournament, the tables are 8 handed and the game changes

.. unless the rounds are timed, which most of them are.

Cash games work like you say, though.

Wikipedia is designed to be corrected and maintained by the readers.
This point is not addressed at all but it is certain to be corrected if
I post something wrong. I thought coming into this that the order of
play was probably in the order of the letters and came to RGP for
confirmation. That is sufficient support to justify my adding it to
the Wikipedia entry. If you don't like what I put you are welcome to

You do Wikipedia a disservice if you post anything of which you are not certain,
and you run some degree of risk of being banned from contributing.

And if you do write about HORSE, you certainly need to distinguish between HORSE
tournaments in general and a particular HORSE tournament. All are not structured
in the same way.

D'oh! My bad. You are of course correct. The tourneys I played
online had 10-minute levels, so the switch happened roughly every
orbit. I didn't think anything different of it.

I've been contributing to Wikipedia for some time and am quite clear on
how it works. In this case, the extent of my contribution to the
article was adding " in that order" to the sentence detailing the poker
variants used in playing HORSE. My question to this group concerned
the order of play, a question not specifically answered by the
Wikipedia entry, so I added just that piece of information for the sake
of clarity. I opted at this time not to address the tournament vs ring
play of HORSE because that will require more writing than I am ready
for. If the entry lacks information I may add more down the road.
